How to test for set on jams, marmalades and jellies

All you need is some saucers or side plates.
  • Pop the saucers into a cold fridge before you starting cooking the preserves.
  • When it is time to test for setting remove the preserve from the heat and take the cold saucer/plate out of the fridge and using a spoon pour a small amount onto the plate.
  • Leave for about a minute and then slide your finger through it.
  • If it wrinkles it is ready.

If you do not get a wrinkle put the jam back onto the heat to boil for another minute / maramalades for another 5 minutes and remove from heat again and test for set again.

I usually put 3 saucers in the fridge, but only ever use the one on the recipes I use to make preserves.
